This Habitation Velier is produced using the Philippine sugarcane variety Manpu. Fermentation lasts 9 to 11 days, incorporating young muck aged in the tropical biome of Bukidnon. Aged for 20 months in ex-Chardonnay barrels, it has an Angels’ share of \u0026gt;10%. Each Habitation Velier expression embodies an original concept with unique characteristics: a world first for each distillery. Still relatively unknown, white Pure Single Rums are the purest expression of sugarcane or its byproducts (molasses). Vintage rums are aged entirely in a tropical climate, with an angel’s share exceeding 8% per year, thus allowing for natural and accelerated maturation compared to European aging, albeit at the expense of the quantity produced.
