Drouin Pommeau De Normandie is a drink made from apple juice fortified with a part of Calvados. To produce it, specific varieties are used among the 30 used for the production of calvados, thus obtaining a very balanced Pommeau, not too sweet but not too acidic either. After pressing, 1/4 of Calvados is mixed with 3/4 of fresh juice, the addition of alcohol, also called "mutage", ensures that the juice does not ferment once bottled. The blend is aged in oak barrels, normally the disciplinary requires a minimum of 14 months, but the Pommeau de Normandie ages longer. This process allows to obtain greater aromatic richness.
