Sandonna
The history between the Paciacconi family and wine dates back to the early 1960s when grandfather Enrico, a master cooper, carefully selected chestnut and cherry woods with which to make the staves for the vats and barrels for aging. The passion for barrels turned into work in the fields and his son Franco's love for viticulture in the 1980s, with the planting of the first vineyards, the initial experiments in winemaking and the start of the wine trade that marked the path of our company that later became a reality in the area.
Passion and work collected by his grandson Alessandro, who of the life immersed in the colors and scents of nature, marked by the changing seasons and climates, personal care of the vineyards and the winery has made the reason for its existence. Nestled in the flourishing vineyards on the plateau from which it takes its name is the Sandonna winery, a newly built structure inaugurated in 2006. The building made with traditional techniques fits naturally into the architecture of the area, restoring that spirit of familiarity, sincerity and authenticity that animates the winery. The proximity to the vineyards allows rapid crushing of the grapes while maintaining their greater integrity, while the effective refrigeration system with temperature control preserves the aromatic and varietal makeup of the musts.
Invasive oenological practices are banned in the winery; rather, there is a tendency to highlight varietal organoleptic nuances by adopting traditional methods such as spontaneous fermentation, racking by gravity, and bottling with little or no filtration. In addition to the areas dedicated to grape reception and vinification with the most modern steel fermenters, side by side with the traditional concrete vats that have been expertly renovated, a room below the heart of the winery, the barrique cellar, is developed where wines that deserve longer aging times mature in oak vats.
