Alipus

Alipús features a selection of mezcals made from Espadin agave, selected and bottled by the Los Danzantes distillery. It stems from a desire to preserve and uphold the role of the mezcaleros and their families in their local communities, ensuring that mezcal production remains exclusive to the Oaxaca region.

Each edition is named after the small village where it is distilled and reflects the terroir—how geographical factors influence the fermentation process and how each master distiller interprets the distillation process.

Joel Cruz of San Juan, Baltazar Cruz Gomez of San Luis, Melchor Hernandez of Santa Ana, Cosme and Hirilo Hernandez of San Baltazar are the maestros who select the agaves, cook them in underground stone ovens, grind them with horse-drawn millstones on a stone floor, allow fermentation to occur naturally, and finally distill them in traditional copper stills.

The entire process takes place in the small villages where their families have lived for generations. Los Danzantes sources only mezcal made from cultivated espadin agave in order to completely eliminate the environmental impact resulting from the continuous harvesting of wild maguey.

The use of 20% Arroqueño agave is permitted only for mezcal distilled in an Olla de Barro by Don Felix Garcia in San Miguel.
