This is how Valinch & Mallet was conceived and created: two friends, from different backgrounds, united by a common passion for whiskey and the desire to turn it into a profession and share its fruits with everyone else.

If we add to this mix the innate Italian love for art and craftsmanship and the legacy left by the extraordinary breeders who have forever linked Italy to Scotland and Scotch Whisky, a picture begins to appear clearer.

Selecting the individual casks is not a science but a matter of taste, an art: where a standard of perfection cannot exist, our creativity and our personal taste are what drives us to prefer one cask rather than another, imagining how the spirit will marry the wood and develop once it is finally poured and sealed in the bottle.

In a world where the influence of wood is sometimes overwhelming, we always seek out the true character of the distillery: choosing what we like best over what we believe will sell the most is the hardest choice, but in reality it is the only one that counts when quality and not quantity is the final goal.

The choice to leave our unchilled whiskeys and rums filtered without the addition of colorants to enhance their appearance is a natural consequence, as is leaving most of them to the natural strength of the cask instead of watering them down to obtain a greater number of bottles: our only whiskeys with reduced alcohol content are those in which a younger age has led to a natural excessive aggressiveness of alcohol towards the congeners that characterize their taste: leaving them untouched would have meant keeping hidden what we loved about them.
