A single, great intuition: to save the world's most prized cocoa varieties from extinction, to keep its original flavors and make them accessible to the world's great chocolate connoisseurs. A brave choice, because these are more delicate, rare and less productive varieties. In fact, aromatic cocoa, also known as fine cocoa, accounts for just 10 percent of the world harvest and Criollo, the rarest variety of all, just over 0.01 percent. The courage of this choice allows not only the production of a chocolate with varied aromatic bouquets, but also the respect and preservation of biodiversity.
Domori is in fact the first company in the world to process exclusively fine cocoa, and the presence of man is as important as the raw material.
