Although Alsace is known for its white wines, many documents relating to inventories of abbey wine cellars collected by the Church in the Middle Ages, report a considerable amount of red wine. Among the 40 varieties used at that time, Pinot Noir has a prominent place. Curiously, the decline of this production begins at the end of the 16th century, and only a few towns in Alsace have maintained the tradition of production (Ottrott, St. Leonard, Boersch, St. Hippolyte, Rodern, Marlenheim ...). So, what many today consider as a novelty is actually a legacy of the past that is becoming increasingly popular. In constant development since 1950, Pinot Noir currently represents 9% of the vines in the Alsatian vineyard (there was only 2% in 1969).

This Pinot Noir comes from a year of aging in oak barrels. We renew some of our barrels every year or every two years depending on the vintage. Indeed, we are looking for a Pinot Noir, whose characteristics can be tasted as a young wine or be so, after a few years of aging in bottle. The characteristics depending on the age obviously cannot be homogeneous. Of a beautiful bright ruby ​​color, on the nose it is pleasant with a typical vinous and full-bodied aroma, slightly vanilla due to its maturation in oak barrels. On the palate, this Pinot Noir Aged in oak barrels presents a beautiful harmony with the body, a good balance, very fruity with notes of red fruit (blackberry and blackcurrant). The whole is of great finesse with round and silky tannins revealing flavors of crunchy fruit. Full-bodied and robust, the combination of this Pinot Noir aged in oak barrels, with red meats and game is quite surprising. Its power allows it to be paired with almost all cheeses (Munster, Roquefort, Bleu d’Auvergne…).
