The processes used to produce Fortaleza Reposado are deeply rooted in tradition, respect for time, and attention to detail. These make it one of the world's finest tequilas. Steam cooking takes approximately 30 hours, fermentation takes over three days—in open wooden vats, where the must emerges at 6°C—and milling takes approximately three hours. Milling is done using mechanically moved volcanic stone tahona. Fortaleza Reposado ages for six to nine months in single batches, with each bottle bearing the aging date. Excellent neat with sangrita, it also lends itself to creating many twists on classic cocktails like the Sazerac, Old Fashioned, or Smash.
