Ugni BlancThe grape juice (3/4) is mixed with (1/4) of unaged Cognac spirit (minimum 70% vol.). The addition of the high-alcohol Cognac spirit interrupts the start of fermentation and maintains the natural sugar of the grapes. The aging takes place in French oak barrels (second passage and old) for much longer than the minimum required by the denomination which is 7 years to obtain the mention “Vieux” followed by a very delicate filtration process to preserve the aromas as much as possible. The Colombard provides persistence and a delicate fruity taste. Ugni blanc provides finesse, elegance and a hint of acidity.

The blend of these two varieties provides a perfect balance of pairing! Aromas of dried fruit, almond but also delicate notes of honey and walnuts. It is recommended to enjoy it at 5° C. alone or in cocktails. Perfect pairing with fruity desserts and mature cheeses.
