The grapes are grown in the "Girlan" subzone on the hills of Oltradige, at an elevation of 450 to 500 m above sea level in well-ventilated vineyards. The production soil is rich in minerals, formed from sediments from the Ice Age.
Harvesting is done manually in small containers for transport to the winery. Gentle crushing and racking for natural sedimentation of the must. Temperature-controlled fermentation in stainless steel vats and aging on fine yeasts in stainless steel tanks.
Pinot Grigio gives small clusters with rust-colored, almost brownish berries. On the same stock are sometimes found Pinot Blanc and Pinot Gris grapes, which belong to the same family as Pinots from Burgundy. Its flavor is delicate and smooth. It goes very well with asparagus, fish and delicate meats.
