This Brunello di Montalcino originates from the Poggio di San Polo, near the renowned town of Montalcino. The characteristics of the soil, mainly of calcareous origin, present the ideal conditions for the cultivation of Sangiovese.
After the harvest, which takes place manually in small boxes in the first week of October, the grapes are softly pressed followed by fermentation in concrete tanks at a temperature of 28-30 ° C for 20-22 days. After malolactic fermentation, which takes place in French oak tonneaux, the wine matures in the same containers for 24 months before a long refinement in the bottle.
It is shown in the glass of a brilliant ruby red color, with a garnet edge. The nose opens on intense aromas of violet and small red fruits, followed by light vanilla and coffee characters. In the mouth it is broad and intense, full-bodied, with a long finish that reveals well-balanced tannins.
Delicious combination of red meats and game, both feathered and fur, it goes well with truffles and aged cheeses.
