The Cremant de Raphael is a tense, thirst-quenching bubbly that is part of the Les Vins Pirouettes project created by Alsatian vigneron Binner. Grapes made from Pinot Blanc, Auxerrois, Riesling and Pinot Gris varietals are gently pressed before spontaneous alcoholic fermentation. Secondary fermentation in the bottle according to the Metodo Classico then takes place, and for the next 26 months the wine is left to rest on the lees. The first sip recalls the crisp bite of an apple, which then transforms the nose to hints of white flowers and bread crust aromas.
