The vivid golden yellow color serves as a backdrop to a fine, continuous perlage with soft, creamy mousse. The nose is perceived as rich, with hints of white fruit evolving into cedar and candied citrus. The palate has a distinct acidity and savoriness, with a medium texture and good drinkability with a long, smooth finish.
The noble Tenuta Di Caseo vineyards used for this Metodo Classico Chardonnay are located at an altitude of 410 meters above sea level in the municipality of Colli Verdi in the Oltrepò Pavese area. The soil is predominantly clayey with the presence of active limestone. The average age of the vines is 20 years. Planting is guyot with a high density of 5,500 vines per hectare. The yield per hectare is 90 q/ha. The grapes were harvested in the second half of August.
Vinification begins with soft pressing of the grapes, where the first-pressing must is separated from the second-pressing must. The flower must is then clarified and fermented in steel tanks for ten days at a controlled temperature of 16.5°C. After four months of aging in steel tanks, the sparkling wine base is prepared. After eight months, the base wine is placed in champagnotte bottles with a liqueur de tirage consisting of wine, sugar and selected yeasts. The bottles are then corked, ready to be laid down in the cellar to re-ferment at a constant temperature between 14°C and 15°C. During disgorgement, which took place in February 2022, the bottle is uncorked, the residue of the refermentation yeasts is removed, and the liqueur d'expédition, the winemaker's signature that makes the wine unique, is added. Finally, the sparkling wine is corked and left to rest in the cellar.
