Clairin Vieux Sajous is produced from the distillation of Cristalline sugarcane, grown on the Saint-Michel-de-l’Attalaye plateau. It is a blend of 19 mixed barrels, which previously contained rum and whisky, and was pot-stilled in 2020, aged for 5 years at the Distillerie de Port-au-Prince, in a tropical climate. The result is a Clairin in which the primary fragrances evolve into an aromatic complexity due to the esterification process.
