It begins to flower when all the others fade... we are talking about Hellebore, a flower from the Ranunculaceae family, also called Christmas Rose because it flowers in December. In this case, however, Elleboro is above all the name of a white IGT Toscana proposed by Podere Conca.
Elleboro is the result of the processing of international grapes. Specifically Viognier, Chardonnay and Sauvignon Blanc. The grapes are harvested by hand, destemmed, pressed and fermented in steel tanks. And its refinement process also continues in steel, for around 4 months. This is then followed by bottling and a further period of refinement in the cellar lasting at least 2 months.
Straw yellow, as soon as it is poured it reveals a beautiful bouquet with a decidedly fruity character. It is easy to distinguish, for example, notes of yellow summer fruit, such as peach and apricot, both ripe and juicy.
In the mouth, then, we discover a powerful white, with a beautiful structure, well supported by a fresh acidity and a convincing flavor. It's the right wine to start the evening. Excellent as an aperitif, on the table it goes well with fish-based dishes or light appetizers.
