Moscato Bianco 100%
Chambave Muscat is a typical wine of the Aosta Valley, produced in the Chambave area with grapes of the white Moscato variety, grown between 450 and 750 meters above sea level on steep vineyards on the south-facing side of the Dora Baltea Valley. The sandy soils of morainic origin together with the temperature variations enhance the scent of the grapes and therefore of the wine.
The harvest begins on September 20th and ends on October 10th starting from the lowest vineyards and ending with the highest ones. The grapes are pressed and left to macerate cold for 12/18 hours. Then they are pressed and only the liquid must begins the alcoholic fermentation in stainless steel vats at a controlled temperature between 12 and 16°C. The wine subsequently matures in steel vats in contact with the fine lees with repeated bâtonnage for a few months.
