Spontaneous fermentation, destemming, and crushing of the grapes. Maceration on the skins for two days in fiberglass tanks. Aging in stainless steel tanks for seven months. 

Rubice Bianco from the Marco Tinessa Winery is a white wine made from grapes grown in two vineyards in the Taburno area of the Sannio region; one is about 90 years old, and the other is about 20 years younger. With its savory and crisp palate, it’s very drinkable.
