Distilled from cider, calvados is traditionally made in Normandy.
The AOC Calvados distinguishes three production sub-areas that identify not only a specific terroir but also different production techniques : 
Pays d'Auge for those Calvados distilled in pot stills based on apple cider only, Domfrontais for those distilled in column stills and with a minimum of 30% pears, Blanche de Normandie for unaged calvados.
An ancient distillate full of charm, in recent times it has been a laboratory for many new proposals with important refinements.
