In 2005, Velier acquired all remaining stocks on the island. The Caroni 2000 contains rum distilled and fully matured in Trinidad. Tropical conditions result in an 80% (angels' share) loss of distilled alcohol due to evaporation. To perfectly capture the uniqueness of this legendary Trinidad rum, the Caroni 2000 has been bottled at 55%. This is the first original edition of the Caroni 2000 for the US market with the classic 75 Cl USA bottle.

The nose is quite surprising for a Caroni with hydrocarbon notes tending towards aromas of roasted coffee and dried fruit. The attack also surprises with a fruity acidity, lime, and very quickly medicinal notes appear reminiscent of eucalyptus, dried fruit and coffee. Surprisingly, the length in the mouth develops a gourmandise less visible during tasting, making one think that once the bottle is held, oxygenation will make this fantastic creation acquire roundness!
