From the Palenque Project, this artisanal agave spirit made from Maguey Tobaziche comes from San Pedro Taviche, Ocotlàn, Oaxaca, and is produced by Juan Hernandez Luis, a fifth generation palenquero.
Although Don Juan Hernandez maintains an approach to production based on traditions far from scientific knowledge in fermentation and distillation, like many mezcal producers, he creates a high quality spirit thanks to his solid experience.
Aromatic notes: Mainly lactic with herbaceous, vegetal and fruity notes of sweet banana combined with hints of dried seeds.
Tasting notes: At the beginning the dulce de leche emerges, with notes of ripe fruit similar to cooked maguey which become delicate with hints of chicozapote and mamey, and then become very vegetal, in which the green pepper is associated with a sensation of bitterness and astringency reminiscent of spinach, rounding out the sweet flavors.
