Vieux Sajous 4 YO Lustau Oloroso Sherry Cask it is one of the first true sherry casks in the history of rum. It is produced in the grand terroir of St. Michel de l'Attalaye, with the Cristalline cane, one of the best ancient varieties, now grown only in Haiti and harvested by hand. Fermentation starts spontaneously with indigenous yeasts; the distillation still is heated over the bagasse fire; the cane fiber is squeezed and dried in the sun. It was totally aged in the tropical climate of Port-Au-Prince, in Lustau barrels that contained the prized Oloroso and Pedro Jimenez, filled on 30 November 2017 and left until August 2021.
