From the Palenque Project, this artisanal agave spirit made from Maguey Tobalà comes from Bramaderos, Miahuatlán de Porfirio Díaz, Oaxaca, and is produced by Alberto and Onofre Ortiz, father and son and fourth and fifth generation palenqueros. Their excellent work is due to the use of personal recipes with a variety of agave blends: an ancient practice, determined by the availability of the plants in the chosen field.
Aromatic notes: At the beginning there are notes of spices associated with chemical notes, then comes the part of lactic aromas such as butter with sweet cooked maguey, and hints of fruit and flowers emerge such as cocoa flower.
Tasting notes: Dulce de leche emerges immediately, followed by fruity notes and then vegetal ones with an astringent touch, which once again make room for the caramelized sweetness that settles into persistent bitter notes reminiscent of resins and green herbs.
