This 3-year aged rum is the second Providence ever aged after the 2019 release. It is produced by the Distillerie de Port-au-Prince, in the heart of the capital of Haiti. The Cristalline sugar cane used for Providence rums comes from Michel Sajous, in Saint-Michel-de-l'Attalaye, 150 kilometers to the north.
Fermentation takes place with natural yeasts, allowing the development of a great aromatic complexity. The liquid obtained after fermentation is distilled in a bain-marie in a discontinuous copper still, built by Müller in collaboration with Vittorio Capovilla.
Aged in ex-Providence Casks.
