Lively and with the right acidity, it rests 36 months on the lees.

With a soft pink color and fine perlage, it is extremely elegant and lively. Medium evolved, the bouquet highlights aromas of red fruits and dog rose. Dry and pleasantly fresh, on the palate the structure gives hints of wild strawberry capable of perfectly balancing the relevant acidity.

Classico are located at an altitude of 530 meters above sea level in the municipality of Colli Verdi in Oltrepò Pavese. The soil is predominantly clayey with the presence of active limestone. The average age of the vines is 20 years. Planting is guyot with a high density of 5,500 vines per hectare. The yield per hectare is 90 q/ha. The grapes were harvested in the second half of August.

To extract the coloring part of the Pinot Noir skins, pink vinification takes place with a short period of cold contact of the grapes in the press in an inert environment. The flower must is then fermented in steel tanks for 10 to 12 days at a controlled temperature of 16.5°C. After four months of aging in steel, the base wine of the sparkling wine. After eight months, the base wine is placed in champagnotte bottles with a liqueur de tirage consisting of wine, sugar and selected yeasts. The bottles are then corked with bidule and crown corks, ready to be stacked in the cellar to referment at a constant temperature of 14/15°C. During disgorgement, which took place in May 2021, the bottle is uncorked, the residue of the refermentation yeasts is removed, and the liqueur d'expédition, the winemaker's signature that makes the wine unique, is added. Finally, the sparkling wine is corked and left to rest in the cellar.
