Handcrafted from a field blend of Cristalline, Madame Meuze, Farine France and 24/14, native cane clones grown organically in the fertile tropical climate lands of Saint Michel de l'Attalaye, the Saint Benevolence Rum Clairin proudly embodies and completely the spirit of Haiti!
The raw material is organically grown in the fields immediately surrounding the Dorcinvil Distillery, a family business with a very long tradition behind which is entrusted with quality agriculture and the production of Rum Clairin Saint Benevolence. Farmers use ancient and natural practices free from herbicides, pesticides and other chemicals.
The cane is harvested by hand, pressed and fermented with wild yeasts for five to seven days, producing a lively vin de canne: a freshly fermented cane juice, ripe with the expressive herbaceous notes of the local Saint Michel terroir.
In homage to Saint Michel, the city of origin of the distillate, a separate batch of the freshly squeezed sugarcane juice is reduced to a syrup and fermented according to the local style known as Methode Saint Michel.
The distillation takes place separately in small batches. The sugarcane juice passes through our handcrafted Creole copper still, fully representing the spirit of Haiti.
True to the Haitian word 'kleren' for clear and translucent crystal in the glass. Green banana, wasabi, with earthy notes of smoke and wet gravel on the nose. A rich structure on the palate with roasted white peppercorns, cloves and green olive mignonettes with an underlying sweetness on the finish. A white of another level!
