From the Palenque Project, this artisanal agave spirit made from Maguey Tepextate comes from San Luis del Rio, Tlacolula, Oaxaca, and is produced by Baltazar Cruz, a first-generation palenquero known for his entrepreneurial prowess.
San Luis del Rio is a village where, for over ten years, a considerable quantity of mezcal has been produced. Thanks to soils particularly suited to the cultivation of different varieties of agave, including Espadín, Sierra negra, Tepextate, Mexicano, Coyote and Mexicanito.
Aromatic notes: At the beginning it is very mineral and brings out the salt, with an acidic touch associated with chemical notes. Dried seed and nut tones gradually emerge; over time, the herbaceous and vegetal notes emerge in the glass.
Tasting notes: The savory note, with a strong peppery touch, almost of chilli pepper, is felt reminiscent of a stew. Notes of onion, salt and burnt caramel, with a long bitter aftertaste of cinnamon and ginger.
