Clairin Sajous is produced at the Chelo distillery, located in northern Haiti, in the municipality of Saint-Michel de l'Attalaye.

It is distilled from pure Cristalline sugarcane juice, an ancient and rare variety grown entirely naturally (without any treatment). Once pressed, the sugarcane juice is fermented without the addition of yeast (the wild yeasts present on the sugarcane are sufficient) for several days before being distilled in a still heated over a high flame.

Like the rest of the range, Clairin is bottled at its natural alcohol content, brut de distillation.
