Florentis Tuscan Malt Whisky Vin Santo is part of the extraordinary series of whiskies that the Chioccioli Altadonna family of Winestillery has begun producing. The process involves a six-day spontaneous fermentation, the use of a “Frilli”-style pot still—a hybrid copper still—and a single discontinuous distillation. The whiskey is then aged in Tuscan oak barriques that previously held Vinsanto. Made with Italian barley, rye, and wheat, and enriched with water from the Fiora Springs, this whiskey is produced in a climate with maximum temperatures of 27°C and minimum temperatures of 14°C, with humidity consistently hovering around 50%.
