66% Merlot and 34% Cabernet Sauvignon
The grape juice (3/4) is mixed with (1/4) of unaged Cognac spirit (minimum 70% vol.). The addition of the high-alcohol Cognac spirit interrupts the start of fermentation and maintains the natural sugar of the grapes. The aging takes place in French oak barrels (roux and old) for much longer than the minimum required by the denomination which is 7 years to obtain the mention “Vieux” with a very gentle filtration process to preserve the aromas as much as possible. The Cabernet gives aromatic power and the Merlot is rich and full-bodied. A perfect combination of structure, acidity and softness!
