Clairin Sajous is produced in the grand terroir of St. Michel de l'Attalaye, with the Cristalline cane, one of the best ancient varieties, now grown only in Haiti and harvested by hand.

Fermentation starts spontaneously with indigenous yeasts; the distillation still is heated over the bagasse fire; the cane fiber is squeezed and dried in the sun. Totally aged in the tropical climate of Port-Au-Prince from a selection of ex-Caroni and ex-Single Malt Scotch Whiskey barrels, Old Sajous is the first Clairin that, after over 4 years of age, becomes a real rum.

We present the second release distilled in 2017.
