An agricultural rum raised in wood produced from sugar cane grown in organic farming certified in the plots of the distillery in La Thieubert, Le Carbet, in the north west of Martinique.
After cutting, partly manual and partly mechanical, the canes are brought to the distillery and pressed by the end of the day in the mills operated by the steam engine, powered by the boiler that uses the "bagasse"as a fuel.
The distillation takes place in the Savalle copper column. Aging is 15 months in reconditioned ex-bourbon barrels, with aging in French oak barriques that have contained Neisson for a few months.
