Produced in limited quantities, using grapes from the finest vintages, it ages for at least 72 months on our selected native yeasts. It develops mellow, warm flavors of toasted almonds, honey, and spices that only time can develop in such a balanced context. The body is fresh and reflects its age. It is available in a Brut version, thanks to the addition of a very light and expert dosage. The grape variety used is 100% Cortese. It is sourced from the classic Collina vineyards, in our estate vineyards. The sparkling winemaking process involves classic fermentation in the bottle, followed by extensive aging on the lees for up to 72 months.
Upon tasting, it presents a bright, pale gold color. The aroma is intense and persistent, with a warm, amber-colored initial impression giving way to intense notes of exotic fruit, waning into honey and spices, creating a smooth, elegant finish. The palate is powerful, dry, and full-bodied, with a decisive, fresh core and a velvety, persistent texture, refined by long aging on the lees. Pleasantly acidic, with a pleasant hint of almond. A sparkling wine ideal as an aperitif and for important lunches, and highly recommended for after-dinner drinking and for "meditation." Serving temperature: 6°C.
