Trebbiano d'Abruzzo grape variety from an old vineyard grown in the territory of the municipality of Atri (Teramo), in the principles of organic farming. Manual harvest carried out in the third week of September.
White vinification. After selection of the grapes, destemming and a short pellicular maceration are carried out. A soft pressing is then carried out and the free-run juice is chilled to a temperature of 8-10°C and decanted for 10-12 hours. The resulting clear must is added with selected yeasts and fermented at a temperature of 16-18°C. The wine is kept in steel tanks for 3 months, after which it is racked and stored in steel tanks at a temperature of about 12°C. This is followed by the next stage of bottling.
When tasted, it has a slightly deep straw yellow color. Nose of remarkable complexity, fresh and intense with clear sensations of ripe exotic fruit. Taste harmonious and soft, round, with excellent fullness, body and persistence. It is excellent with seafood appetizers, light first courses, fish dishes and low-fat cheeses.
