Ette is a white wine produced by Summer Wolff in Montaldo di Cellina, Piedmont. Baratuciat grapes come from calcareous clay soils at 250 meters above sea level, ferment spontaneously in cement with indigenous yeasts and macerate 9 days on the skins. Aging always takes place in cement for several months. The wine is bottled without filtration or clarification and in glass it rests one year. It is an expressive and harmonious wine, aromatic and super drinkable, the nose is dominated by citrus and floral scents. Ette is short for Ettore the second son of Fabrizio and Summer. Try with appetizers or first courses of fish and shellfish.
