Scapigliato is a wine that comes from the Lucca hills, from old vineyards of Ciliegiolo, Aleatico and other native vines of the area, which in some cases are over 70 years old. The vineyards are cultivated under organic farming on gentle hills with north-south exposure, characterized by clay and calcareous marl soils rich in skeleton.
The harvests are carried out manually and the grapes are fermented in steel tanks with the use of only indigenous yeasts and a 7-day maceration on the skins. The wine ages for 6 months, partly in steel and partly in concrete, to keep the freshness of the primary aromas of the grapes intact and completes the refinement with a few months in the bottle before being put on sale.
