Hand harvested and vinification by cold pre-maceration of the must for 48 hours, start of fermentation at a controlled temperature of 27°.
During alcoholic fermentation, several délestages are carried out in order to extract aromas and sweet tannins from the skins.
After racking and malolactic fermentation complete, the wine is left to rest for 18 months waiting to be bottled.
Intense ruby red in color with violet reflections, the nose is persuasive and well pronounced, typical and elegant, the perception of ripe red fruit is clear,
embellished with spices deriving from the original characteristics of the old vineyard of origin.
On the palate it is warm, soft and tasty, the presence of sweet tannins typical of the variety,
together with the consistent structure, it gives the wine a good persistence.
